QUICK & EASY & HEALTHY 15 mins RECIPE! My grilled swordfish

This quick, 15-minute recipe has now become my son's favorite dish and it is so easy and simple to make. The main obstacle is the cost of swordfish, however, you can substitute with tuna or tilapia though it tastes differently, and just this past weekend the swordfish was on sale at Whole Foods for $15.99 a pound.

INGREDIENTS:
- 2 -3 medallion cut fillets of swordfish ( depending on how many ppl you are feeding)
- Sea salt and black pepper
- Italian parsley
- Olive oil
-  1/4 of a Leek
- half a lemon

PREP:
- Chop-up finely leek and parsley.
- Slice each medallion on swordfish down the middle making two fillets out of one.

Heat up a frying pan or stop top grill, pour in about two large tablespoons of olive oil, throw in three pinches of salt, and toss in chopped.
Sautee the leeks until lightly brown - goes fast! delicately place the fillets of swordfish in the pan and sprinkle some of the parsley over. After 3 mins once it's nicely grilled flip the swordfish over and add some black pepper, flip over again and your done! Plate it with some penne pasta or instant brown rice add a thickly sliced ripe heirloom tomato, and sprinkle some lemon juice over.
